Vegan spring rolls

Delicious Asian dish

Preperation time: approx. 30-45 minutes

Ingredients

  • 1 handful shiitake, dried
  • 2 tbsp ginger, peeled and finely chopped
  • ½ savoy cabbage, finely chopped
  • 4-6 cloves of garlic, finely chopped
  • 3 spring onion stalks
  • ½ tsp white pepper
  • ½ tsp sugar
  • 1 tbsp 5 spice powder
  • Oil for frying
  • Spring roll wrapper
  • 1 tbsp starch
  • 1 tbsp cold water

Preparation

Pour boiling water over the dried shiitake mushrooms in a bowl and soak for about 30 minutes. Then chop into small pieces.

Pour hot water over the glass noodles in another bowl and soak

Heat the oil in a wok, fry the garlic and ginger and add the spring onions.

Then add the remaining ingredients, i.e. shiitake mushrooms, savoy cabbage, glass noodles, wok vegetables and spices, and fry briefly.

Allow the filling to cool.

Roll ca. 1-2 tbsp of the filling into a wrapper and seal with a starch and water mixture.

Heat ca. ½ – 1 cm of oil in a shallow pan and fry the spring rolls over a medium heat until golden brown on both sides.

Serve with chili sauce for dipping.

  • 1 clove of garlic (pressed)
  • 2 tbsp sesame oil
  • Chili flakes to taste

preparation

Soak the glass noodles in hot water and leave to soak for 4-5 minutes. Then drain them.

Mix the fresh vegetables, tofu, soaked glass noodles and dressing in a large bowl.

Garnish with chopped peanuts, fresh coriander and finely chopped spring onions.

Mix the salad well to ensure the dressing is evenly distributed.

Arrange the Shan’shi glass noodle salad with fish sauce dressing on plates and garnish with additional chili flakes if desired.

  • 150 g prawns (frozen, ready to eat, deveined)
  • 1 large onion
  • 2 cloves of garlic
  • 50 g cashew nuts
  • Salt & Pepper

preparation

  • Thaw the vegetable mixture and shrimp.
  • Prepare rice noodles according to package instructions and set aside.
  • Mix the seasoning mixtures (2 bags in Asia-Fix Bami Goreng seasoning mixture) with 100 ml water, then stir in the Kokosmilch and Sojasauce .
  • Peel and dice the onion and garlic. Add both to the thawed vegetable mixture and add the rice noodles. Salt and pepper as needed.
  • Heat some Erdnussöl in a pan and sear the shrimp in it. Remove shrimp from pan and set aside.
  • Add the seasoning, Kokosmilch , and Sojasauce mixture to the pan and heat for a few minutes.
  • Add the shrimp and spice mixture – Kokosmilch – Sojasauce mixture to the rice noodle – vegetable mixture and leave to stand in the fridge for several hours.
  • Garnish with cashew nuts.

  • Soak mu err mushrooms in water for 30 minutes.

  • 400 g vegetables {peppers, carrots, peas}
  • 200 grams of chickpeas {vorgegart}
  • 750 ml vegetable soup
  • juice of a lime
  • Salt pepper
  • 200 grams of shrimp
  • ½ bunch of fresh coriander
  • Some sesame for garnish

preparation

  • Clean and finely chop the onion, spring onion and garlic. Wash, clean and chop the vegetables. Heat 2 tbsp Sesamöl in a saucepan. Sauté onion, spring onion and garlic in it until translucent.
  • Add the curry paste and let everything simmer briefly.
  • Add the vegetables, chickpeas and vegetable soup and simmer for about 10 minutes.
  • Season with Sojasauce , some lime juice, Salt and pepper.
  • Season the shrimp with Salt , pepper and remaining lime juice. Heat the remaining Sesamöl in a pan. Fry the shrimp in it.
  • Meanwhile, cook the glass noodles in plenty of water.
  • Chop the fresh coriander. Put part of it aside for the garnish and fold the remaining coriander into the soup.
  • Serve the soup with the glass noodles in deep plates or bowls.
  • Serve garnished with the shrimp and coriander and sesame seeds.
