Spicy Thai Curry Noodle Soup

Shan'shi ingredients

  • 200 g smoked tofu
  • 80 g baby spinach
  • 1 spring onion
  • 10 g ginger (fresh)
  • 1 clove of garlic
  • 500ml of water
  • Salt
  • Depending on the desired sharpness: red chili peppers


  • Peel and finely chop the garlic and ginger. Cut the smoked tofu into cubes and the washed spring onions into fine rings.
  • Heat Erdnussöl in the wok and sauté the garlic, ginger and spring onions for about two minutes. Add 2 tsp Thai Curry Paste Red and fry briefly.
  • Add the diced smoked tofu and fill up with 500 ml water.
  • Add a pinch of Salt and the uncooked egg noodles. Simmer all ingredients for 5 minutes over medium heat and pour in Kokosmilch .
  • Add washed baby spinach and cook for 1-2 minutes.
  • Season the finished soup with Salt , pepper and 2-3 tablespoons Sojasauce .
  • Garnish with red chilies, depending on how spicy you want it.
