Ingredients
Shan'shi ingredients
- Shan'shi Mie egg noodles
- Shan'shi Soy sauce
- Shan'shi Sesame oil roasted
- Shan'shi Oyster Sauce
For the Noodles
- 250g Shan’Shi Mie egg noodles
- 2 pieces chicken breast
- iglo wok vegetables
- 1 tbsp garlic
- Spring onions (only the green part, cut into cm pieces)
- 1 tbsp Shan’shi sesame oil
- 1 tbsp ginger, finely chopped and peeled
For the Marinade (Chicken)
- 3-4 tbsp Shan’shi soy sauce
- 2 tbsp Shaoxing wine
- 1 tsp potato starch
- 1-2 tbsp water
For the Sauce (Noodles)
- 2 tbsp Shan’shi soy sauce
- 2 tbsp dark soy sauce
- 2 tbsp water
- 1 tbsp Shan’shi oyster sauce
- 2 tsp sugar
- 1 tsp starch
Preparation
Marinate the chicken:
- Cut the chicken breast into thin strips.
- Marinate with soy sauce, Shaoxing wine, potato starch, and water, stirring until the liquid is completely absorbed.
Prepare the noodles:
Cook the Mie egg noodles until almost done and briefly rinse with cold water.
Fry the chicken:
Fry the chicken in a wok until firm, then remove and set aside.
Fry the vegetables:
- In the same wok, fry the garlic.
- Add the Iglo wok vegetables and continue frying.
Add the noodles and chicken:
- Put the noodles and chicken back into the wok.
- Add the prepared sauce (soy sauce, dark soy sauce, water, oyster sauce, sugar) and mix well. If a darker color is desired, add more dark soy sauce. Thicken the sauce with starch dissolved in a bit of cold water.
Add the spring onions and sesame oil:
Mix in the chopped spring onions and 1 tbsp sesame oil.
Season and serve:
Garnish with spring onions and sprinkle with sesame seeds as desired.
