Preparation

Preparation:

  • Pound the garlic cloves, chilies, and shallots into a fine paste.
  • Mix all the liquid ingredients (oyster sauce, fish sauce, light soy sauce, water) with sugar in a bowl.
  • Wash the Thai basil and pick the leaves.

Frying:

  • Heat peanut oil in a pan and fry the prepared paste until the aromas are released.
  • Add the ground pork and fry thoroughly, breaking it apart as it cooks.

Add Sauce:

  • Mix the prepared sauce into the meat.
  • Add the Thai basil and stir until it wilts.

Fry Eggs:

  • In a separate pan, fry the eggs sunny-side up.

Serve:

  • Serve the Pad Krapao with rice and place the fried egg on top.

  • Pat the ribs dry and trim excess fat. Fold the bottom of the ribs up so the skin is showing. Insert the handle of a spoon between the bone and the skin and carefully peel off the skin and gently peel off the ribs.
  • Mix the curry paste with Salt , pepper and olive oil and rub it neatly into the ribs. These are now wrapped and placed in the fridge for at least 2 hours.
  • Preheat the oven to 150°C top and bottom heat. The ribs are now placed in a roasting pan or in extra-strong aluminum foil, tightly closed, in the oven for three hours.
  • In the meantime, the glaze can be prepared. Put the chilli sauce in a small saucepan together with the sugar, butter and the juice of one lime and bring to the boil.
  • After three hours, the ribs are coated with the glaze and put back in the oven for 15-20 minutes on the grill function. The glaze is touched up every 5-10 minutes.
  • When the ribs are ready, you can take them out of the oven. Sprinkle with sesame seeds and fresh spring onions, if you like, and serve.

  • Halve and stone the avocado, separate the flesh from the skin with a tablespoon and cut into strips 1/2 cm thick.
  • Place a sheet of nori seaweed on the bamboo mat, spread the sushi rice evenly over it, leaving 1cm free at the top.
  • Place avocado strips in the middle and spread with wasabi paste.
  • Roll up the bamboo mat with the rice and press firmly.
  • Open the bamboo mat, cut the roll into 1.5cm thick pieces and arrange on a plate.
  • Arrange Sojasauce in a small bowl and serve with it.

  • 10 leaves chinese cabbage (Napa)
  • 100 ml chinese Shaoxing cooking wine (if not available, replace with cooking sherry)
  • 30 g shiitake mushrooms (sliced) (if fresh mushrooms are not available, dried mushrooms can be used by soaking them in water for 30 minutes and then squeezing them out)
  • 30 g spring onions (chopped)
  • 1 tbsp ginger
  • 1 tbsp garlic
  • 300 g corn starch
  • 1 egg white
  • 2 tsp. salt
  • 2 tbsp sugar

Preparation

Place the minced pork in a bowl with the garlic, spring onions, oyster sauce, 1 tbsp wok sauce, 1 tsp sesame oil, 50 g cornstarch, 1 tsp salt, 1 tbsp sugar and 1 egg white. Mix well with your hands until the mixture has a paste-like consistency. Use this paste to form your Lion’s Head meatballs. Traditionally, they are quite large, so prepare each meatball with a handful of paste, work it until it is firm and round, then toss it in the cornstarch until it is fully coated.

Fry them in the pan until they are golden brown and set aside.

Heat a pan over a medium heat and add the wok oil, garlic, ginger and shitake mushrooms and cook for one minute. Add cabbage leaves. Put the balls into the pot, add water, 1 tbsp sugar, 1/2 tsp salt and 1 tbsp wok sauce, cover with a lid and simmer for 3 minutes. Add the Shaoxing wine and cook for 10 minutes over a medium heat, then reduce the heat and cook for a further ten minutes.
