Shan'shi ingredients
- 1 tbsp Shan’shi Oyster Sauce
- 1 tbsp Shan’shi Soy Sauce
- Shan’shi Peanut oil for frying
Other ingredients
- 4 garlic cloves, finely chopped
- 2-3 shallots, finely chopped
- 1-2 (or more) birdseye chilies, to taste
- 400 g ground pork
- 1 tbsp fish sauce
- 1-2 tsp dark soy sauce
- 2 tbsp water
- 2 tsp brown sugar
- 1 bunch Thai basil
- 2-4 eggs
Preparation
Preparation:
- Pound the garlic cloves, chilies, and shallots into a fine paste.
- Mix all the liquid ingredients (oyster sauce, fish sauce, light soy sauce, water) with sugar in a bowl.
- Wash the Thai basil and pick the leaves.
Frying:
- Heat peanut oil in a pan and fry the prepared paste until the aromas are released.
- Add the ground pork and fry thoroughly, breaking it apart as it cooks.
Add Sauce:
- Mix the prepared sauce into the meat.
- Add the Thai basil and stir until it wilts.
Fry Eggs:
- In a separate pan, fry the eggs sunny-side up.
Serve:
- Serve the Pad Krapao with rice and place the fried egg on top.

- 1/5 tsp Thai Curry Paste Red
- 150ml Chilisauce scharf
Additional ingredients
- 4 rows of ribs
- 2 tsp Salt
- 1 tsp pepper
- 4 tbsp olive oil
- 2 tbsp butter
- Juice a lime
- sesame and spring onion for garnish
preparation
- Pat the ribs dry and trim excess fat. Fold the bottom of the ribs up so the skin is showing. Insert the handle of a spoon between the bone and the skin and carefully peel off the skin and gently peel off the ribs.
- Mix the curry paste with Salt , pepper and olive oil and rub it neatly into the ribs. These are now wrapped and placed in the fridge for at least 2 hours.
- Preheat the oven to 150°C top and bottom heat. The ribs are now placed in a roasting pan or in extra-strong aluminum foil, tightly closed, in the oven for three hours.
- In the meantime, the glaze can be prepared. Put the chilli sauce in a small saucepan together with the sugar, butter and the juice of one lime and bring to the boil.
- After three hours, the ribs are coated with the glaze and put back in the oven for 15-20 minutes on the grill function. The glaze is touched up every 5-10 minutes.
- When the ribs are ready, you can take them out of the oven. Sprinkle with sesame seeds and fresh spring onions, if you like, and serve.
Tip:
To save time, marinate the ribs the night before and chill.

- 2 tbsp Erdnussöl
- 125 g Reisnudeln Pad Thai (=2 noodle nests)
- 2 tbsp Sesamöl geröstet
Additional ingredients
- 2 pieces of pork fillet, approx. 150g each
- 20 g sesame seeds
- Salt, pepper
- 1 bunch of fresh mint
preparation
- Wash the pork fillet, pat dry and season with Salt and pepper.
- Put the sesame seeds on a plate and roll the fillet pieces in it so that they are well covered with sesame seeds.
- Heat Erdnussöl in a wok or skillet and sear the fillets for 10-12 minutes on each side until done.
- Cook Reisnudeln Pad Thai in a saucepan until al dente, then strain and keep warm.
- Wash the mint, pluck the leaves from the stems and cut into fine strips.
- Mix the hot Reisnudeln Pad Thai with the mint and the Sesamöl geröstet , season with Salt and spread on two plates.
- Cut the pork fillet into slices and arrange on the noodles.
Tip:
Serve the Shan’shi Sambal Oelek in a small bowl.

- 1 glass Chop Suey
- 4 tablespoons Sojasauce süß
- 2 tablespoons Erdnussöl or Woköl
Additional ingredients
- 350 grams of pork
- 1 small can of pineapple
- 8 mushrooms
- 2 tbsp chicken soup
- 2 spring onions
- 1 garlic clove chopped small
- 1 tsp ginger
- 1 teaspoon chopped chilies
- 1/2 tsp sugar
preparation
- Cut the meat into thin strips, quarter the mushrooms and finely chop the spring onions.
- Heat 2 tablespoons Erdnussöl in the wok and fry the garlic in it until golden brown. Add meat and mushrooms.
- Fold in the remaining ingredients one at a time.
- Stir everything together over high heat until the meat is done. Finally season with Salt , pepper and sugar and taste.
Tip:
Serve with basmati rice.

- 2 tbsp Sojasauce
- 2 tbsp Chilisauce süß
Additional ingredients
- 250 g pork (filet or minute steaks)
- 1 large red onion
- 300 grams of broccoli
- 150g basmati rice
- 2 cloves of garlic
- 1 tbsp oil
preparation
- Cut the pork into fine strips and mix with Sojasauce and sweet chilli sauce. Prepare rice according to instructions.
- Defrost the broccoli under hot running water. Peel the onion, halve and cut into strips.
- Heat oil in a wok or pan and sear the marinated meat. Add onion and fry well. Then add the garlic and broccoli, toss well and fry for another 3 minutes. Deglaze with the remaining marinade.
- Arrange the meat and broccoli on a plate with the onion. This is served with the rice.
Tip:
1-2 teaspoons Sambal Oelek make this dish particularly flavorful.

- 2 tbsp Erdnussöl
- 1 g large can Kokosmilch milk 400ml
- 2-3 teaspoons Thai Curry Paste Red
Additional ingredients
- 150 g chicken (leg skinless & boneless)
- 400ml chicken soup
- 1 red pepper
- 2 spring onions
- 120 g peas (frozen)
- 1 tbsp oil
preparation
- Cut the pork into strips and set aside.
- Wash zucchini and cut into thin slices, finely chop garlic and onion.
- Cook rice noodles according to instructions.
- In a pan or wok, sauté the garlic, onion and pork in Erdnussöl .
- Deglaze with red curry paste and Kokosmilch and simmer for about 5 minutes.
- Add zucchini and cook for another 5 minutes.
- Then fold in the rice noodles and garnish with the peanuts.
Tip:
For a spicier note 1 tbsp Shan´shi fish sauce

Mie Eiernudeln with pork fillet and vegetables

- 125 g Mie Eiernudeln (=2 noodle nests)
- 5 tbsp Woksauce
- 2 tbsp Erdnussöl
- 1-2 tbsp Sesamöl geröstet
Additional ingredients
- 250 g pork fillet
- 2 carrots
- 10g shiitake mushrooms
- 1 green pepper
- 2 green onions
- fresh ginger, about 2 cm long
- Salt , pepper
preparation
- Ginger peel and finely chop. Mix Woksauce with chopped ginger in a soup plate.
- Cut the pork fillet into strips and marinate in the ginger sauce for 10 minutes.
- Wash and trim the carrots and peppers and cut into strips.
- Wash the spring onion and cut into thin rings.
- Wash the shiitake mushrooms and soak them in warm water for at least 15 minutes. Then cut into strips.
- Cook Mie Eiernudeln in a saucepan until al dente and then strain the Mie Eiernudeln .
- Heat Erdnussöl in a wok or frying pan and sear the pork tenderloin while stirring.
- Add the chopped vegetables and sauté for a few minutes.
- Finally, add Mie Eiernudeln and season with the remaining marinade and Sesamöl geröstet .
- Season with Salt and pepper.
Tip:
Of course, other vegetables such as Shan’shi Bambussprossen , zucchini or pea pods are also ideal for this dish.

- 2 tbsp Sojasauce
- 2 tbsp Chilisauce süß
- 190 g Mie Eiernudeln (= 3 noodle nests)
Additional ingredients
- 200 g pork (filet or minute steaks)
- 1 tsp brown sugar
- 120 grams of mushrooms
- 2 spring onions
- 1 clove garlic
- 1 large carrot
- 2 tablespoons oel
preparation
- Cut the pork into fine strips. Prepare Asian marinade from Sojasauce , sweet chilli sauce and brown sugar and place the meat in it.
- Clean the mushrooms with a damp kitchen towel and cut into quarters. Clean the spring onions and cut into rings about 0.5 cm thick. Finely chop the garlic. Peel the carrot, halve lengthways and cut into narrow crescents.
- Prepare egg noodles according to package instructions.
- Meanwhile, put oil in a hot wok and fry the pork in it. Set aside the remaining marinade. Add carrots. After a minute, add the garlic and mushrooms.
- Add the spring onions to the meat and toss through. Add the rest of the Asian marinade and the freshly drained egg noodles.
Tip:
For an extra portion of spiciness, mix 1 teaspoon Sambal Oelek into the finished noodles.

Ingredients for: 4 people

Shan'shi ingredients
- 1 glass Asiatisches Wokgemüse
- 4 tbsp Erdnussöl
- 4 tbsp Sojasauce
- 1 tbsp Chilisauce scharf
Additional ingredients
- 500 grams of pork
- 5 tbsp teriyaki sauce
- 1 tbsp ginger
- 4 MuErr mushrooms
- 1 green pepper
- 1 large clove of garlic
- 3-4 green onions
- 1 tbsp ginger
- 25 g cashew nuts
preparation
- Cover the shiitake mushrooms with warm water and Leave to soak for 30 minutes.
- In the meantime, cut the meat into strips and place in Shan’shi Teriyaki Sauce. Wash and clean the vegetables. Finely chop the peppers into strips, the onions into rings and the garlic. Strain Asiatisches Wokgemüse and wash briefly with water. Remove the shiitake mushrooms from the water, pat dry and cut into very fine strips.
- Pour Erdnussöl into a heated wok. Fry the nuts until fragrant, then remove. Fry the meat in the remaining Woköl while stirring. Add the vegetables, garlic and Shan’shi ginger, sauté until crisp.
- Deglaze with Sojasauce and Chilisauce scharf , season and cook the contents of the pan for another 3 minutes while stirring. Arrange on a plate and serve sprinkled with the nuts.
- Thoroughly wash the sushi rice in a colander. Boil 150ml water with the sushi rice in a saucepan and cook covered for 10-15 minutes over low heat. If necessary, add some water.
- As soon as the water has been absorbed or the sushi rice is already soft, remove the pot from the heat, place a clean tea towel over the pot and let the rice soak for another 10 minutes.
- Mix sushi rice with Reisessig and allow to cool to room temperature while stirring.
- Halve and stone the avocado, separate the flesh from the skin with a tablespoon and cut into strips 1/2 cm thick.
- Place a sheet of nori seaweed on the bamboo mat, spread the sushi rice evenly over it, leaving 1cm free at the top.
- Place avocado strips in the middle and spread with wasabi paste.
- Roll up the bamboo mat with the rice and press firmly.
- Open the bamboo mat, cut the roll into 1.5cm thick pieces and arrange on a plate.
- Arrange Sojasauce in a small bowl and serve with it.
Tip:
Serve with basmati rice.

- 2 tbsp Shan' Shi oyster sauce
- 2 tbsp Shan' Shi wok sauce
- 2 tsp Shan'Shi sesame oil
- 2 tsp Shan' Shi wok oil
- 1 liter Shan' Shi peanut oil
Additional ingredients
- 600 g minced pork
- 10 leaves chinese cabbage (Napa)
- 100 ml chinese Shaoxing cooking wine (if not available, replace with cooking sherry)
- 30 g shiitake mushrooms (sliced) (if fresh mushrooms are not available, dried mushrooms can be used by soaking them in water for 30 minutes and then squeezing them out)
- 30 g spring onions (chopped)
- 1 tbsp ginger
- 1 tbsp garlic
- 300 g corn starch
- 1 egg white
- 2 tsp. salt
- 2 tbsp sugar
Preparation
Place the minced pork in a bowl with the garlic, spring onions, oyster sauce, 1 tbsp wok sauce, 1 tsp sesame oil, 50 g cornstarch, 1 tsp salt, 1 tbsp sugar and 1 egg white. Mix well with your hands until the mixture has a paste-like consistency. Use this paste to form your Lion’s Head meatballs. Traditionally, they are quite large, so prepare each meatball with a handful of paste, work it until it is firm and round, then toss it in the cornstarch until it is fully coated.
Fry them in the pan until they are golden brown and set aside.
Heat a pan over a medium heat and add the wok oil, garlic, ginger and shitake mushrooms and cook for one minute. Add cabbage leaves. Put the balls into the pot, add water, 1 tbsp sugar, 1/2 tsp salt and 1 tbsp wok sauce, cover with a lid and simmer for 3 minutes. Add the Shaoxing wine and cook for 10 minutes over a medium heat, then reduce the heat and cook for a further ten minutes.
Tip :
Don’t forget to serve your lion’s head meatballs with a bowl of hot rice.
