Spicy Ribs – Asian pleasure meets BBQ.

  • 4 rows of ribs
  • 2 tsp Salt
  • 1 tsp pepper
  • 4 tbsp olive oil
  • 2 tbsp butter
  • Juice a lime
  • sesame and spring onion for garnish

preparation

  • Pat the ribs dry and trim excess fat. Fold the bottom of the ribs up so the skin is showing. Insert the handle of a spoon between the bone and the skin and carefully peel off the skin and gently peel off the ribs.
  • Mix the curry paste with Salt , pepper and olive oil and rub it neatly into the ribs. These are now wrapped and placed in the fridge for at least 2 hours.
  • Preheat the oven to 150°C top and bottom heat. The ribs are now placed in a roasting pan or in extra-strong aluminum foil, tightly closed, in the oven for three hours.
  • In the meantime, the glaze can be prepared. Put the chilli sauce in a small saucepan together with the sugar, butter and the juice of one lime and bring to the boil.
  • After three hours, the ribs are coated with the glaze and put back in the oven for 15-20 minutes on the grill function. The glaze is touched up every 5-10 minutes.
  • When the ribs are ready, you can take them out of the oven. Sprinkle with sesame seeds and fresh spring onions, if you like, and serve.

Steamed Asian dumplings – authentic and delicious!

  • 250 g flour universal
  • ½ pack dry yeast
  • 2 tbsp sugar
  • 1 tsp Salt
  • ½ tsp baking powder
  • 150ml warm water
  • ½ handful Finely chopped white cabbage
  • 1 small handful of fresh or dried shiitake mushrooms
  • 100ml Water
  • 1 tbsp starch
  • 2 tsp sugar
  • dip: 50ml Sojasauce , 50ml ponzu, 50ml maple syrup, sesame

preparation

  • First the dough is prepared. Place flour, dry yeast, sugar, Salt & baking powder in a large bowl or food processor. Then add the water and oil and stir everything until a smooth ball of dough is formed. Now the dough is covered and placed in a warm place for 40-60 minutes until it doubles in size.
  • Meanwhile the filling is prepared. Heat Erdnussöl and curry paste in a large pan, add cabbage and mushrooms and sauté for 6-7 minutes. Then add Sojasauce and sugar. Mix water with starch, stir into a pan and cook for 2-3 minutes. Add Chop Suey , mix well and then chill for 30 minutes.
  • Then shape the dough into 8 equally sized balls, roll them out and place one or two teaspoons of the filling in the middle. Shape the dough into a ball, making sure the filling doesn’t spill out. Prepare a pot with water and a steam insert, then put in the parchment paper and steam the baozi for 10 minutes at medium to high temperature. Now the dumplings can be served with Sojasauce or our dip.

  • 350 g chicken meat
  • 1 red bell pepper (cut into small pieces)
  • 1/2 tsp sugar
  • 1/2 tsp lemongrass
  • 1/2 teaspoon chopped chillies

preparation

  • Cut the chicken into small pieces and, if necessary, place them in 4 tablespoons Sojasauce before cooking to intensify the taste.
  • Heat Woköl , pour in half the Kokosmilch and bring to the boil. Stir in Thai curry paste red and simmer over medium heat for approx. 1 minute. Stir in the meat and the remaining 4 tablespoons Sojasauce süß and cook briefly. Mix in the chopped Bambussprossen , the chopped red pepper, sugar, remaining Kokosmilch , lemongrass and chillies. Simmer the red chicken curry over medium heat for about 10 minutes.

Serve with basmati rice. To give the dish more flavor, simply replace the Sojasauce süß with fish sauce.

preparation

  • Dice the vegetables.
  • Heat 1-2 tbsp wok oil and sear the vegetables.
  • Deglaze with 1-2 tsp Sojasauce .
  • Top up with Kokosmilch .
  • Add red curry paste.
  • Add the drained chickpeas, simmer for about 10 minutes and add a little sugar to taste. Mix well again & enjoy!

  • 300ml of water
  • 1 bunch of green asparagus
  • 1 green pepper
  • 100 g green beans (frozen)
  • 100 g broccoli (frozen)
  • 1 tbsp oil

preparation

  • Bring the rice and 300ml water to a boil in a saucepan. Stir, reduce the heat to the lowest level, cover and let stand for 15 minutes.
  • Wash the asparagus and separate the woody ends (approx. 1-2 cm). Cut the rest into 2cm pieces. Set aside four beautiful tips.
  • Clean the peppers and cut into 2 cm pieces.
  • Defrost the beans and broccoli under hot running water.
  • Heat oil in wok. Fry the asparagus and peppers for two minutes over medium heat. Add green beans and broccoli. Season with Sojasauce .
  • Mix in the red curry paste. Pour in Kokosmilch and bring to a boil.
  • Serve the rice and curry. Decorate with the asparagus tips.

  • 1 red pepper
  • 1 can of peeled and diced tomatoes
  • 1 can/jar chickpeas (225 g)

preparation

  • Wash the chicken fillet, pat dry and cut into strips. Wash, core and cut the peppers into strips.
  • Put the wok starter in the hot wok and fry the chicken strips vigorously in it.
  • Add the pepper strips and peeled tomatoes. Season with turmeric, cumin and Thai Curry Paste Red . Stir well and cook covered over medium heat for 10-15 minutes.
  • Rinse the chickpeas in a colander, add and mix well again. Flavor with Sojasauce .

  • Soak rice in warm water for 30 minutes
  • Strain the rice and mash with your fingers until the rice breaks
  • Boil the milk, Kokosmilch and sugar
  • Add the rice and cook for about 30 minutes on the lowest flame, stirring constantly, until a mushy mass is formed
  • Roll the cooled mass into balls with wet hands and then roll them in coconut flakes
  • Strain the mango slices, blend into a thick mass with the hand blender and add a little lemon juice
  • Arrange the mango pulp in the middle of the plate, place the rice balls on top

  • 300 g chicken fillet
  • 3 brioche buns
  • zest of a lime
  • 1 tsp grated ginger
  • ½ cucumber
  • 1 small red onion
  • 4 tablespoons white wine vinegar
  • 1 tbsp maple syrup
  • fresh coriander
  • mayonnaise
  • Salt

preparation

  • Wash the cucumber and cut into thin strips with a vegetable peeler. Cut the onion into fine rings, mix the vinegar, maple syrup and Salt in a small bowl and place the chopped ingredients in it.
  • For the burger patties, wash the meat, pat dry, cut into small pieces and place in a bowl with the curry paste, lime zest and grated ginger. The ingredients are now mixed well together and formed into three thin patties of the same size. Fry them for 2 minutes on both sides.
  • The buns are toasted and the underside spread with mayonnaise. Then come the patties, the pickled cucumbers, the onions, a few Bohnenkeimlinge and finally fresh coriander.

  • 1 small onion
  • 1 clove of garlic
  • 1 small chilli chopped
  • 1/2 tbsp ginger

preparation

  • Cut the chicken breast into thin strips and dice the small onion.
  • Heat Woköl in a pan or wok. Garlic, ginger, curry paste, chopped chili and lemongrass in 1 min. Fry over medium heat, stirring constantly. Add the chicken strips, onion, sugar and a pinch of Salt and mix gently.
  • Covered 10 mins simmer over same heat until onions are translucent, stirring occasionally. Add Kokosmilch , bring to a boil, stirring occasionally.
  • Reduce the heat and simmer uncovered for 15 minutes. simmer until the chicken is very tender. Then mix in Asiatisches Wokgemüse . Salt to taste

  • 150 g chicken meat
  • 400ml chicken soup
  • 75 g pea pods (halve)
  • juice of half a lemon

preparation

  • Cut the chicken into strips. In a large saucepan, bring the chicken and about 1/3 of the Kokosmilch to a boil, stirring. Add red curry paste, stir and cook until flavor spreads. Make sure all the pieces are coated in the paste.
  • Add remaining Kokosmilch , chicken soup, pea pods and Sojasauce and simmer for 7-8 minutes. In the meantime, prepare Mie Eiernudeln according to the instructions.
  • Remove soup pot from heat and stir in lemon juice to taste. Put the noodles on a soup plate, distribute the chicken and fill up with the soup.
