- 200 g mushrooms, sliced
- 4 garlic cloves, finely chopped
- 1 tbsp Shan'Shi rice vinegar
- 150 ml heavy cream
- 1-2 tsp gochujang
- 1 tsp sambal oelek
- 1 tsp sugar
- A dash of soy sauce
- 2 packs Shan'Shi udon noodles
- BBQ seaweed flakes
- Sesame seeds
Preparation
Prepare the Noodles:
Cook the udon noodles according to the package instructions, drain, and set aside.
Sauté the Mushrooms:
Heat the peanut oil in a pan and sauté the mushroom slices until they turn slightly brown and develop a roasted aroma.
Add Aromatics:
Add the finely chopped garlic cloves to the mushrooms and sauté briefly.
Prepare the Sauce:
- Deglaze with 1 tbsp rice vinegar and add 150 ml heavy cream.
- Stir in gochujang and sambal oelek.
- Add 1 tsp sugar and a dash of soy sauce to taste.
Combine Noodles with Sauce:
Mix the cooked udon noodles well with the sauce.
Serve:
Divide the noodles onto plates and garnish with BBQ seaweed flakes and sesame seeds.

- 300 g flour
- 150 g hot water
- 30 ml peanut oil
- 40 ml cold water
- pinch of salt
- Flour for the work surface
- Peanut oil for coating
preparation
Knead flour with hot water, peanut oil and a pinch of salt to form a smooth dough.
Add cold water and continue kneading until the dough is uniform.
Shape the dough into a ball and cover with a damp tea towel. Leave to rest for at least 30 minutes.
Meanwhile, finely chop the spring onions.
After the resting time, knead the dough again and divide into 8 equal pieces. Shape these into balls.
Sprinkle flour on the work surface to prevent sticking. Roll out the dough into a circle about 1 mm thick and brush with peanut oil.
Spread 1-2 tbsp of the finely chopped spring onions on top, season lightly with salt and roll into a sausage.
Shape the rolled sausage into a snail and flatten with the palm of your hand. Roll out a little thinner if desired (recommended thickness: 1 mm – 1.5 cm).
Heat some peanut oil in a frying pan and fry the pancakes for about 3 minutes on each side over a low to medium heat until golden brown and crispy.
Use sambal olek for dipping.

- Let the soup simmer gently for about 15 minutes. Before serving, add the tomatoes, basil and lemon juice and let the soup steep for 4-5 minutes.

- Reduce the heat slightly, place the fish fillets in the sauce and leave to stand for 7-8 minutes until the fish is cooked through.
- Don’t cook any longer than necessary or the sauce will curdle!
Tip:

preparation
- Cut the chicken breast and the selected vegetables and ginger.

- 80-100ml water or vegetable broth
preparation
- Peel onions and cut them into fine pieces. Heat 2 tablespoons Erdnussöl in the wok, add the chopped onion and peanuts.
- Season with Sambal Oelek , Sojasauce süß , ginger, lemongrass and stir-fry over low heat for 5 minutes.
- Gradually add some water or chicken broth.
- Then process the mixture in the blender to a creamy paste.
- To smooth the sauce, mix in the remaining 2 tablespoons Erdnussöl .
- Cut the chicken into thin strips about 15 cm long and thread onto skewers. Brush the meat with some peanut sauce and grill or fry for 3-4 minutes on each side.
- Arrange the remaining peanut sauce in two bowls and serve with the skewers.

Saté means “meat grilled on bamboo skewers over a wood fire” in Indonesian.
