Fast Thai Curry Soup

  • 300 ml vegetable broth
  • 350 g vegetables of your choice (e.g. carrots, zucchini, mushrooms)
  • 1 small piece of ginger (about 1 cm)
  • fresh cilantro or parsley
  • ½ lime

preparation

  • Bring the vegetable broth, Kokosmilch , Thai Curry Paste Red and Sojasauce to the boil in a saucepan with the ginger.
  • Add the chopped vegetables and cook until done.
  • Cook the glass noodles for 5 minutes.
  • Then add the lime juice and garnish with fresh coriander or parsley.
