Bahn Gan (Vietnamesische Crème Caramel)
The Vietnamese can thank the French for introducing crème caramel into their kitchen. But we can thank the Vietnamese for adding coconut.
Preparation time: over 30 minutes

- 400 ml Shan’ Shi coconut milk
Additional ingredients
- 400 ml coconut milk
- 200 ml Unsweetened condensed milk
- 7 whole eggs
- 3 whole eggs
- 300 g Sugar
- 1 l Water
- 1/2 TL Salt
- 1 cup freshly grated coconut
Dark, rich caramel and creamy coconut milk for this classic dessert with an exotic twist that is not only easy to make, but delicious whenever you want to impress your family and friends.
Preparation
Place 8 metal molds in a baking tray with a depth of 2 cm. Prepare the caramel by heating 200 g of sugar with 3 tablespoons of water in a small pan over a very low heat. When the sugar starts to get brown, remove it from the heat, pour it evenly into the aluminum molds and leave it to cool.
In a blender, add the eggs and egg yolks, coconut milk, all the condensed milks and 100g of sugar and blend until well combined. Divide this mixture evenly between the aluminum molds. Carefully pour 1 l of boiling water into the tray with the molds and place the tray in the oven at 160 °C for one hour. Remove from the oven and leave to cool. Then keep in the fridge for at least 30 minutes, or better, overnight, before serving.
Tip:
To serve, scoop the pudding onto a plate using a bamboo stick and garnish with freshly grated coconut.

- 400 grams of ice cream
- 200 grams of honey
- 250 grams of melon
- 1 pinch Salt
preparation
Cut the melon to 3/4 of its length, remove the seeds and use a spoon to scoop out the melon to obtain a melon peel.
Place ice cream in blender along with remaining ingredients and blend until smooth.
Fill into the emptied melon and serve with straws.

- 1 L Erdnussöl (for frying)
- 2 tbsp Woksauce
- 1 tbsp Woköl (for cooking)
- 1 tbsp sweet chili sauce
- 1 tbsp rice Reisessig
Additional ingredients
- 800g chicken breast
- 300 g all-purpose flour
- 2 tbsp sugar
- ½ tsp salt
- 2 tbsp lemon juice
- 1 tsp grated lemon zest
- 1 tsp grated ginger
- 2 eggs white
- 1 tbsp chopped spring onions
- 1 tsp sesame seeds

In this recipe, made with the help of my loved ones, we’ll show you how to make a delicious lemon chicken, a Chinese classic that’s also popular in the West.
Dice the chicken breasts and place in a large bowl, add the Protein and Salt , mix well and set aside.
Place the flour in a large container and toss the chicken cubes in it until each piece is completely coated in flour.
Heat the Erdnussöl in a wok, add the chicken and fry until golden brown (you can of course also use an electric or air fryer).
Once the chicken is done, remove from the oil and place on a piece of kitchen paper to soak up the excess oil.
Now it’s time to prepare the lemon sauce: In a separate bowl, mix together the squeezed lemon juice, grated lemon zest, grated ginger, sugar, Woksauce , sweet chili sauce, and Reisessig .
Heat the wok oil in a separate wok, stir in the lemon sauce and cook for 2/3 minutes. Add the fried chicken and stir until the sauce reduces and the chicken is translucent.
Sprinkle with sesame seeds and spring onions and serve on a tray.
Tip:
Serve with lemon slices.

This is a popular dish in Thailand, eaten by thousands of people every day.

A few years ago, the first survivors to be rescued from Tham Luang Cave asked for this dish as their first real meal after starving in the cave for two weeks.

Thinly slice the beef and set aside. Crush the garlic and fresh chili in a mortar.
Heat the Erdnussöl in a wok and add the curry paste, leave to stand for a few minutes so that the curry can develop its flavor.
Add the crushed garlic and chili, cook for a minute, then stir in the beef.
Continue cooking for a few minutes until the meat begins to brown, then add the sugar, Woksauce , Sojasauce , and chopped basil.
Cook for another 3/4 minute and then serve.
Garnish with fresh basil and chili.
Tip:
In Thailand, this dish is usually served with jasmine rice and a fried egg.

- 1/2 teaspoon Salt (for the water)

Put a pot of water on the stove, add the Salt and bring to a boil.
Add the pasta and cook for 3/5 minutes depending on how soft you want them to be.
When the noodles are done, drain and, if you want to eat them cold, rinse under cold water and set aside.
Chop the spring onions, shallots and chili and cut the nori seaweed into strips.
Put the noodles in a bowl, add Sesamöl , Woksauce and chopped vegetables.
Stir well and garnish with nori seaweed.
