- 250 Gr Shan’Shi Udon Noodles
- 1 tbsp Shan’Shi Wok Sauce
- 1 tbsp Shan’Shi Sesame oil
- 2 tbsp Shan’Shi Wok oil
Other ingredients
- Rib Eye Steak cut in stripes 250 Gr
- Garlic powder 1 tsp
- Ground Black Pepper 1 tsp
- Corn Starch 1 tbsp
- Baking Soda 1/2 tsp
- Sugar 2 tbsp
- Chili powder 1 tsp
- Sesame seeds 1 tsp
- Garlic finely chopped 1 tbsp
- Ginger finely chopped 1 tbsp
- Red onion medium sliced 1 tbsp
- Spring Onion cut in chunks 1/2 cm 2 tbsp
Preparation
Slice the meat in thin stripes and place it in a bowl add oil, soy sauce, garlic powder, corn starch, black pepper and baking soda, mix until the meat is completely covered and leave it in the fridge to marinate overnight or for at lest for 30 minutes. Heat up the oil in a wok over medium heat, add the beef and cook it turning on each side until medium well done then set in a separate container. Bring a medium pot of water to the boil and leave it on the stove. Pour the oil in the wok and fry garlic, ginger and onion for 2/3 minutes, add wok sauce, sesame oil, sugar and continue to cook while you throw the noodles in the boiling water for 3 minutes . When the noodles are ready drain and add them the wok. stir fry for 2/3 minutes, finally add the marinated beef, chili powder, spring onions and leave to cook for another couple of minutes. Serve it immediately, topping with sesame seeds.

- Shan'Shi sesame oil (see sauce)
- 1 package Shan'Shi Crab chips
Additional ingredients
- 400g filet of beef
- 1 bunch of chives
- 1 Champignon
- Sesame seeds to garnish
- 1 clove of garlic
- 30g ponzu
- 30g yuzu
- 3 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp kewpie
preparation
Peel and finely chop the garlic clove. Mix in a bowl with the remaining ingredients for the sauce.
Cut the meat into thin strips and then cut the long strips very thinly crosswise until you have fine pieces.
Mix the beef well with the sauce.
Finely chop the chives and fold in.
Finely slice the mushrooms with a slicer or cut them very thinly.
Arrange the tartare on a plate, alternate the mushroom slices with crab chips in a row in the meat and garnish with some sesame seeds and a few dabs of Kewpie mayonnaise.

- 500g beef for goulash
- 2 spring onion stalks
- 20g ginger
- 2 star anise
- 1 cinnamon stick
- 3 bay leaves
- 2 tbsp sugar
- peanut oil for frying
- 1 level tbsp potato starch
Preparation
Cut the spring onion into pieces, ca. 5cm long.
Peel the ginger and cut into slices ca. 1 cm thick.
Cut the meat into ca. 3×3 cm cubes.
Place 1-2 tablespoons of oil in a wok and heat. Add the sugar and stir until it dissolves and caramelizes slightly.
Add the meat and fry in the oil and sugar mixture until the pieces are cooked through.
Add the soy sauce, then add the spices.
Pour in half a liter of boiling water so that the meat is slightly covered.
Leave everything to simmer gently for 2.5 hours.
Then dissolve the starch in a little cold water and slowly mix into the soup while stirring.
Reduce the liquid to ca. 1/3 while boiling.

- 2 rump steaks (approx. 200g/piece)
- 1 bunch of green asparagus
- 1 cucumber
- 2 limes (juice)
- 2 tsp sugar
- 1 tbsp O
preparation
- Wash rump steaks. Pat dry with paper towels and set aside.
- Wash the asparagus and cut off the woody ends (approx. 2-3 cm).
- squeeze limes. Whisk together the juice, Sojasauce , and sugar in a bowl. Wash the cucumber, cut in half and thinly slice lengthwise.
- Heat oil in wok or pan. Salt the rump steaks and fry for about 3 minutes. Then wrap in foil and let rest.
- Fry the asparagus in the cooking residue until al dente. Add the sweet chilli sauce and toss.
- Mix the cucumber slices with the lime juice, Sojasauce and sugar marinade and arrange on a plate together with the asparagus.
- Cut the steaks open and place them on the asparagus.
Tip:
Serve as a small side dish, crispy Shan’shi Krabbenchips .

- Arrange meat with vegetables on a plate. Serve with the rice.

- ½ glass Bambussprossen (165g)
- 2 tbsp Sojasauce
- 2-3 tablespoons Sesamöl geröstet
Additional ingredients
- 300 grams of beef
- 1 onion
- 1 piece of ginger
- 1 clove of garlic
- 1 small red chili
- pepper
preparation
- Peel and finely chop the garlic and ginger. Cut the onion into thin rings and the beef into strips.
- Marinate everything in a bowl with 2 tablespoons Sojasauce and 1 tablespoon Sesamöl .
- Cook Mie Eiernudeln according to instructions.
- Sear the marinated beef in a wok or pan with another tablespoon of Sesamöl for 2-3 minutes.
- Drain Bambussprossen and Mie Eiernudeln and fry for another 2-3 minutes.
- Season to taste with pepper, Sojasauce and Sesamöl .
- Finally, garnish the dish with the finely chopped red chili.
Tip:
Roasted cashew nuts and coriander leaves give the dish an additional Asian touch.

Shan'shi ingredients
- 1 tsp Sambal Oelek
- 100ml Kokosmilch
Additional ingredients
- 250 g beef fillet or sirloin
- 1/2 teaspoon coriander (fresh or dried)
- 1 clove of garlic
- 1 red onion
- 1 red pepper
- 1/2 tsp ginger
- 1/2 tsp lemongrass
- 75 g grated coconut
preparation
- Cut the beef into thin slices. Peel and finely chop the garlic and onion. Cut the peppers into small cubes.
- Process 3 tablespoons Kokosmilch with ginger, coriander, lemongrass, Sambal Oelek , garlic and onion into a paste.
- Heat the wok and sauté the paste briefly. Add the pieces of meat and peppers and stir-fry for 5 minutes.
- Finally, pour in the remaining Kokosmilch .
- Briefly roast the grated coconut in a coated pan while stirring and serve sprinkled over the beef.
Tip:
Sprinkle with chopped coriander and serve with basmati rice or Mie Eiernudeln .

Shan'shi ingredients
- 50 grams Bambussprossen
- 2 tsp Sojasauce
- 1 pack Glasnudeln Vermicelli
- 2 tablespoons Erdnussöl or Woköl
Additional ingredients
- 125 g of minced meat
- 1 large spring onion chopped
- 1 large carrot (finely grated)
- 1 large garlic clove (chopped)
- 1 packet of rice dough sheets (or rice paper) for spring rolls
- 1 teaspoon fresh coriander (optional)
- 4 tsp fish sauce
- Shan'shi Erdnussöl for frying.
preparation
- Soak the shiitake mushrooms in water for about 15 minutes beforehand. Then soak the rice dough sheets briefly in cold water and lay them out on a damp kitchen towel. Soak Glasnudeln Vermicelli in hot water for about 5 minutes and then drain.
- Cut the shiitake mushrooms (drained) and the Glasnudeln Vermicelli into small pieces. Heat Woköl in the wok, briefly sauté the garlic. Add minced meat and fry stirring constantly. Add Bambussprossen , shiitake mushrooms, spring onions, carrots, Glasnudeln Vermicelli , fish sauce, Sojasauce and cilantro, if desired, and sauté for 3 minutes.
- Place a portion of the filling in the center of the pastry sheet, fold in the sides and roll up the pastry sheet. Press down the edges well. Heat Erdnussöl in fryer or wok.
- Place three or four rolls in hot Woköl and fry until golden. Drain on a rack covered with kitchen paper.
Tip:
Serve Chilisauce scharf with Shan’shi Sojasauce or Shan’shi chili sauce, depending on taste.
